Peanut Butter Heath Bar Cookies (by Bunny Spice)
2 cups creamy peanut butter
1 cup light brown sugar, packed
1 cup granulated sugar
2 eggs
1 tsp vanilla
2 tsp baking soda
½ tsp kosher salt
1 cup Heath bars (about 21 miniatures), chopped
Heat oven to 350°. In a large bowl, mix peanut butter, sugars, eggs, vanilla, baking soda, and salt until smooth. Fold in chopped Heath bars.
Scoop by the tablespoonful and shape dough into balls. Place two inches apart on parchment-lined cookie sheets. Use the tines of a fork in a criss-cross pattern to flatten balls.
Bake for 10-12 minutes, rotating the cookie sheets halfway through, until puffy and golden. Let cool slightly before transferring cookies to a wire rack.
